Does anyone have a recommendation for a cozy stay in Luxembourg? What special sights did you enjoy?

It is hard for me to interpret "cozy stay." We stayed at the Radison Blu Park Inn which was comfortable and convenient.
We walked along the battlements, visited friends of my sister and had a fairly moving visit to the American Cemetery.

do you mean the country or the city? I love Luxembourg - both bits.
Have they relaxed the entry requirements? Recently when I checked they wouldn't let anybody in from many countries including mine.

We're planning to go in June . . . Hopefully "things" will be better then . . well, we know how those plans have gone in the last 2 years :)

I stayed at the Hotel Simoncini. Great location. The owner also owns an art gallery so art was displayed throughout the hotel.
