As a needlepoint enthusiast I would like to visit some German needlework shops during a future trip to Nuremberg. A google search is not being very fruitful. I am hoping some people familiar with Nuremberg and/or needlework might weigh in for me.
I have not been to Nuremberg, but this website may help. A lot of the information is out of date but it is a starting point.

I am not certain about needlepoint specifically, but one of the major needlework/wool stores that I used to go to when I lived in Nürnberg that I would recommend, is Tolle Wolle. I have not been in some years, but the used to have lovely things.
If you want to search for it with German terms, e. g. in Google Maps: "Nürnberg Handarbeitsladen".
Tip: only 5 hrs away by train from Nuremberg away you can visit Handarbeitsmuseum Traunkirchen in Austria.
There is still the traditional shop "Wolle Roedel" in the Breite Gasse in the middle of the centre (my grandmother already used to buy there ;)). From the Lorenzkirche, walk south into Pfannenschmiedsgasse, after 100 metres turn right into Breite Gasse. The shop is on the left after about 100 metres in the "Idee.Creativmarkt" (house no. 25).
