Will be staying in Landshut for a week in July. Besides what
is in this town, are there anything or places you recommend
that would be day trips that are historical or cultural. My
wife and I are on our 35th anniversary as a trip this July.

Nürnberg is pretty historical. It's a little less than 2 hours away by RE, on which you could use a 27€ (for 2) Bayern-Ticket.
Regensburg is 35-40 minutes by regional train from Landshut. It is a UNESCO World Heritage Site for its medieval buildings. It is a maze of alleyways and squares. It has Roman ruins and a princess in residence at the Thurn & Taxis palace. One of our favorite towns in Germany.
Freising is 20-30 minutes from Landshut. I really like this small town, which is criss-crossed by waterways. It boasts the world's oldest active brewery and the Domberg (cathedral on the hill). It was an area power before Munich existed.

The Hallertau area (Hops for Beer) is just to the northwest of Landshut. Might be something to consider for a country trip.
A longer day trip to the south would be Chiemsee. Could be nice in July at/on the lake. Wasserburg is unique, but not sure I would recommend it based on my short visit. If you keep going fairly far south Berchtesgaden and the National Park would be great, but probably not a day trip. I think the Königssee is one of the most beautiful places in Germany.
Burghausen the city and castle to the southeast I could recommend for a day trip.
