Leipzig & Nuremberg - traditional German cuisine

Good day all,
I am looking for traditional German cuisine in either Leipzig or Nuremberg, one that serves Spaetzle! Any suggest from Travelers or Residents from those cities? Also Bayreuth is an option for a city.

My college age son loves Spaetzle but so far we have had no success in either Berlin (where are currently) or Wolfsburg.

Spätzle is a southern Germany specialty, originating in Baden-Württemberg, but also popular in Bavaria. You should be able to find them easily in Nuremberg.

Tip from a local in Berlin: Repke Spätzlerei & Flammkuchen (website). Really good stuff.

Spätzle is of Swabian origin. Swabia includes a bit of south western Bavaria (including Augsburg) and a larger part of Baden-Württemberg in south central Germany.

We lived in Augsburg for four years and loved Spatzle. It is used in many ways in cooking. It is a type of noodle and my favorite dishes is when it is combined with onions and cheese.

In Franken you will find klöße. A Potato and flour dumplig. Spätzle is more to the west and south. You can probably find Spätzle along with a dish somewhere in Nürnberg.

This is a great post and great responses.

I try to get to Germany at least once each year. Yet, I still struggle with thinking of German food as just one cuisine, rather than many regional cuisines with their own unique variations.

You can get spaetzl at the Trodelstuben, a wine bistro at the Trodelmarkt in Nuremberg. I've been going there for 40 years.

Spaetzle is not really native to either of those cities.

A very trad restaurant in central Leipzig is Auerbachs Keller. I visited a few years ago and the food was excellent then.
