What ticket do I need to use from Munich Airport to city and travailing around the city. Can I buy a Bayern ticket to Fussen the day before traveling? Thanks, Jay

Buy a Airport-City-Day-ticket (single €13.60/1, group: €24.30). You can buy a Bayern Ticket any time, but it is valid only on the day you have booked it for and non-refundable. So if your plans change you will loose your money. I'd buy it on the spot from any DB or MVV vending machine.
