Just like your other itinerary, you're aiming too high.

Arrival - There are no "quick" meals at the Hofbrauhaus in May. It's tourist season. You'll be lucky to get a table, eat, and leave in 2 hours.

Day 1 - You can always find something to eat, but Dachau is a very emotional place. I've taken several groups of visitors there. It pretty much ruins the rest of the day. And unless you already have a bike, you're going to need an hour, minimum, to rent one. You need to plan that out. The Residence tour takes hours. Last year with 3 cousins I couldn't get them through it in 4 hours. The English Garden is another place that can take hours to go through. It's large, and can be crowded. And then you want to add a couple churches and the Documentation Center? Why bother with a bike, public transport is much smarter.

Day 2 - If anyone in your family is into cars you're going to spend 4 hours at BMW. Plus travel time.

Day 3 - Take the train to Salzburg. It's much faster than driving and a heck of a lot cheaper. And Salzburg is not a city for biking. The old town is narrow and cobblestones, and will be very crowded. And you cannot bike up to the fortress.

Day 4 - It is, minimum, 4.5 hours drive from Salzburg to Hallstatt. On roads you don't know. and parking sucks. You will need to leave by 6am to make your planned salt mine tour. If you do make that tour, you'll arrive for lunch at your planned destination after 2pm. And you'll still need 4+ hours to get back to Salzburg, which may be possible to do by the time your concert begins, provided you don't do anything else. And you need to know that parking in both Salzburg and Hallstatt sucks and isn't cheap.

Day 5 - Salzburg to Fussen is about 6 hours of driving. But staying in Fussen is not your best option. Garmisch is much more central to Linderhof, Oberammergau, Weisskirch, Eibsee, and the Zugspitze, and even to Neuschwanstein when looked at as a package. I know, RS loves Fussen, but it's just another tourist town. Not that GP isn't, but GP is more practical. And I drive between these places every 5-6 months. GP also allows you to use the train and then either join a tour or take a train, tram, taxi or bus to all your planned visits.

Not bad, but a bit rushed.
Also, you don't place to go up the Zugspitze from Garmish. Not sure it is open in May, but it might be.

Wow, except for Dachau, your itinerary is almost the same as my wife and I when we went in September. We were in Germany for the entire month of September, landing in Munich, dinner at Hofbrauhaus, overnight in Munich and then train to Berchtesgaden which we based or lodging out of Berchtesgaden. Train to Salzberg-town center, the Mirabell Gardens, Hohensalzburg Castle, on to Fussen and the two Ludwig Castles. We when took the train to the Black Forest.
But really similar. First at Munich's Hofbrauhaus for Sept 5 when we ate there, it was very crowded, squeezing through people, we found a table that had about 3 feet of space among other folks, climbed into the spot and landed stayed there for about 2 hours, too hard to move around. People at table were wonderful and welcomed us. Couple next to use from Indiana was great and nice. Probably it will be even more crowded in May, but you'll love it.

We rented a car only once after getting to the Black Forest, but we wanted to travel through the forest, visit Triberg on our own time and the rental car was great to have. Other than that, we took trains and buses for the entire time. Well worth it and very efficient too. I think we only had a one hour wait for a train.

At Fussen, the Ludwig Castles, both of them were great. I'd do that again. I've heard some folks say the Neuswchwanstein Castle is not worth the ticket and time of about 45 minute tour with guide, but we loved it and actually learned alot, we did the same with the castle next door and down the hill the Hohenschwangau Castle. That was great too! Mary's Bridge was a highlight, make sure you walk up to it, not far easy path gentle up hill climb. Scary walking out on bridge-when taking photos dont drop your phone! You'll never get it back if it falls off the bridge. The planks on the bridge seem to be loose, kinda moving up and down as you walk on them -which gives a thrill... You have alot planned, although I would suggest to plan a bit more time in the town of Fussen, it was absolutely wonderful as well. And if you get a change to walk through the town of Berchtesgaden (My all time favorite), while visiting the Obersalzberg Doc Center do it, you will not be disappointed.

LUNCH AT OBERAMMERGAU

Would highly recommend Ammergauer Maxbrau. We had lunch there last year and it was great. Their kellerbier was fantastic too.

Oberammergau has a really fun alpine coaster, but depending on crowrds, it might take 1.5 hours for the whole experience.
