For just a few hours stop along the way or for longer? I know that your other question was about where to overnight in or near Nordhausen and I assume that "in" is easier than "near," though other options could work.
Commentors will want to know more about your whole itinerary and especially how much time you have. If you wanted to make the Nurnberg to Nordhausen trip quickly with only one train connection, then it would be at Gottingen.
Can we assume that you specifically want to see the Mittelbau-Dora camp memorial? An alternate would be Buchenwald memorial near Weimar, which is also close to Luther-related stops at Erfurt and Eisenach.

Also- Nordhausen is a must- my grandfather took part in the liberation.

After exploring Nurnberg for the morning, we're headed to Nordhausen. Since we are driving - we can stop anywhere along the way- any thing worth stopping for???
When we reach Nordhausen - I was thinking of relaxing/ dining - heading to the museum in the morning. So here is my other question- do we stay in Nordhausen- or maybe Stolberg? It looks beautiful!
After the camp/ museum visit in the morning- we will be on the road again to cologne- to head back to London. Are there any places we should stop at along the way?
A good stop between Nuremberg and Nordhausen is Erfurt, but it takes some time to explore one of Germanys biggest preserved city centres. A shorter stop would be Naumburg, a cute small town with a famous Gothic cathedral.
You are right about Stolberg. It's the perfect place to stay for a night. A very beautiful small town.
Between Nordhausen and Cologne you could stop at Hann. Münden or Soest, both beautiful preserved towns, or see Bergpark Wilhelmshöhe in Kassel, a World Heritage Site.
BTW: it's frustrating that you don't have more time. You are so close to the Harz mountains, but don't have time to see at least Quedlinburg, a town like Rothenburg odT, but bigger, without the tourist hordes, and a World Heritage Site. Maybe you should skip Stolberg and stay in Quedlinburg instead. The town is really one of Germanys highlights, and even a short visit is better than none.

The most important stops along the A73 / 71 are Bamberg and Erfurt. In between there is Coburg, also very nice but not of equal rank. With small detour to the west you can visit Gotha, historically related to Coburg and also worth seeing.
