We would like to take the train to a smaller town on our way to Cochem but need some ideas. Need one serviced by train. Thx.

Not sure what you're looking for exactly.
Esslingen is about half way to Cochem on the normal route, not far from Stuttgart. It's no major metropolis but it's not as small as Cochem either. It's a very attractive university town you might like.

Are you looking for an overnight destination to break up a 9-hour train ride? If making the whole train trip in one day, then I'd choose the 9:00 a.m. departure that requires just one connection. A stop on the Rhine river, such as Bacharach, would only shave an hour off that day's travel time, so I assume that's not your intention.
