My husband and I are planning to stay in Beilstein and would love to sleep by the Mosel River at Rick Steves' recommended Hotel Lipmann Altes Zollhaus. It is more pricey than we hoped to pay, so we found the Hotel Haus Burg Metternich (just down the river) to be almost $100 less for 3 nights. Does anyone know if it is also a good choice, and do they speak English?
Go ahead. I have never found a Hotel, Pension, Gästehaus, etc, in Germany that was not a nice place to stay in. I have no idea if they speak English, but many people in Germany do, particularly if they are in the tourism business.
Beilstein is a very small town. There is very little there to see. Other than as a place to sleep, I can't recommend it.

We never stayed here, but it looks very nice. I have the same opinion as Lee. We spent over 80 nights in Germany and Austria the last 12 years and never stayed in a "clunker". I would never let the language spoken keep me from staying somewhere. Learn a few German words and phrases (Rick Steve's books have some good ones) and don't worry any more. Chances are your host or someone there knows at least some English. Even IF they didn't, you'd get by. Go for it.
One last thing, again. I agree with Lee, Beilstein is tiny and not much to do there. It is a cute little town though. We had dinner in Beilstein during our 4 night stay in nearby Valwig, another place with not much to do, but it was just across the Mosel river from Cochem, which we liked a lot.

Haus Burg Mitternich claims to be a member of DEHOGA (German Hotel and Restaurant Association), but they don't show stars. Hotels with at least 3 stars must have someone on staff who can speak English.
Judging from their website, it's a pretty nice place.
The booking form asks what language you speak, but only gives one choice, German.
By the way, the website says their price for two in a double room is 68€-84€. Booking dot com only shows one price, 86€, for two. In my experience, it's not unusual to be able to get better deals by going directly vs. using booking websites.
We stayed at Hotel Lipmann a few years ago and really liked it--had a nice view of the Mosel. The meals were absolutely great. Each meal, including breakfast, was served by candlelight. Most of the staff spoke some English. Our visit was in late October so maybe the rates were lower then.
I can recommend Beilstein. We stayed there for 3 nights last May and enjoyed the peaceful atmosphere and the opportunity to fully explore a small town. We did day trips to Burg Eltz and another day to Bernkastel-Kues. We stayed at the Hotel Lipmann getting a room with a balcony and enjoyed watching the people cross on the small ferry and cruise ships on the Mosel. We hiked up to the castle and Jewish cemetery and probably every delightful street in this small jewel!
Similar to Lee's report, the only bad hotel or guesthouse I've ever had in Germany was the one in Munich that I booked upon arrival in town on the first day of Oktoberfest.
