We will be checking out from our hotel in Nuremberg and heading to Bamberg for a quick day trip before heading to Berlin. I can't decide whether we should bring our luggage to Bamberg and hope we find enough lockers for our stuff and take the ICE Train from there to Berlin or leave our stuff at the hotel in Nuremberg and go to Bamberg and return to Nuremberg to catch the ICE Train from there?

Hard to predict the locker situation. I would consider this instead...
Departure day from Nuremberg: Leave bags at hotel or in N'berg station locker; sightseeing in Nuremberg only; leave 17:02 on the ICE sprinter (takes 2 hrs. 40 minutes) or pick a different afternoon journey that suits you.
Departure day -1: Day trip Nuremberg > Bamberg > Nuemberg (VGN Tagesticket Plus, €25.50/2 persons, regional train.)
