How to celebrate 6 yo Bday on the way from Kassel to Tubingen? (we have 2 days)

Hello!

Our family of 4, with 2 boys ages 3 and 5, arrives to FRA on July 6. From there, we go to Kassel for 3 nights to see the distant family. The day we leave Kassel, is my older son's 6th birthday. We have 2 days and 2 nights to do something fun for him. Then, we have to be in Tubingen, to meet with our friends. We also want to go to Stuttgart (probably on the way to Tubingen) to check out the Mercedes and Porsche museums (it's mostly for the dad, lol).
Are there any ideas of where we can spend these two nights? Ideally, in the same spot but we're open. A castle? Would love to have a pool there... Schlosshotel Kronberg doesn't have it.
Water park? Any unique hotels fun for children? Anything you can recommend for a wonderful birthday experience?
We will have a rental car.

About halfway between Kassel and Tubingen is Darmstadt. Just outside of Darmstadt is the Messel Fossil Pit and museum, which may be interesting to a 6 year old boy. It's pretty good. But...

If you're going to Stuttgart the State Museum of Natural History Stuttgart is really fantastic with a huge selection of dinosaurs and fossils, and special tours for kids. I've been in some of the worlds best Dino museums, and this place is that good. You could easily do this in the same day as the Porsche museum, or with a visit to the Zoo, which is also really well done. The Porsche museum does have stuff for kids, even us older ones. (Don't mix up the natural history museums in Stuttgart, the one I've linked to is the one with dinos, the other one is more recent biology.)

An alternative, because it's not on everyone's list, would be to go to Speyer and spend a day or two. As good as Stuttgart is for car lovers, the Technical Museum in Speyer is even better for kids who might be interested. Because they have airplanes you can climb in, a submarine you can go through, mechanical stuff you can turn on (like huge music machines or trains), and hundreds of cars, planes, and just about everything else mechanical. Plus the museum there has a huge display of toys, the cathedral has the largest number of Holy Roman Emperor tombs, and the town is really easy to walk around. And for parents, it's got really good beer gardens on the river and sits in the middle of the wine region. And they have an aquarium.

I think that based on 2 full days available with kids Rust would be with 2 hrs one way too far out of the way. Therefore I did not recommend it. The other two mentioned are more on their way.

There is also the Steiff Museum in Giengen an der Brenz, Germany. Depending on what your 6 year old likes. Steiff manufactures really cool stuffed animals. It doesn't seems too far out of your way.

Also in Böblingen (South of Stuttgart) is a hotel that is devoted to cars called Motorworld. They have a museum of sorts there too. People store their personal cars there and there are some really cool ones. When we were there in 2015 you could rent certin cars and drive them on the runways (it is on an old air strip) Not sure they still do that, but my dad and Hubby were like kids in a candy shop

East of Tubingen, maybe 90 minutes, is Legoland, which has its own accommodation.
