Use www.hrs.com or booking.com to find hotels with AC. You can book with the hotel itself then if you like.

Coupled with Rick's advice for accomodations in his book(s), we also use booking.com extensively. We travel a lot and booking.com has never steered us wrong. You can filter "in and out" the items important to you including air conditioning. In addition to air conditioning, for us we always like to know about convenient parking on site or near by. This fall, in Cochem we have chosen
Hotel Germania.
