Traveling in July. Will be in Munich for 1 night. Does anyone have a recommendation for a room in the city center that's easy to find with parking ?

Don't stay in the Altstadt, stay just outside. Park at the Bahnhof, it's cheaper. I've used Aloft and the Courtyard for business stays. My favorite Pension is closed. You could also look around the university and ride the ubahn in.
