Is 7 minutes enough time to make a connection at Hof train station with a large bag?

Are you arriving from Dresden and going on to Nuremberg? That's a regular connection and the Nuremberg train will wait in case the Dresden train is delayed. So you shouldn't have any problem.

Where are you going from/to? DB will show which tracks you arrive and depart from. Generally, if they show the connection, they figure you can make it. There are actually 3 platforms at the station with a track (gleis) on each side. Each platform has an elevator as well as a stairway to the under passage connecting the platforms.
I am going from Dresden to Regensburg.
This is also a regular connection. There are currently no through trains to Regensburg or Nuremberg because electrification south of Hof has not yet been completed.
Looks like you are arriving on track 10 and departing from track 6A, so you will have to change from the outer platform to the middle platform. You might want to be by the train door with your suitcase as the train arrives in Hof. Stairs will be quicker if you can manage your suitcase, otherwise use the elevators. The train to Regensburg originates in Hof, so it should be waiting for you when you arrive.
