Yes, I use collapsible hiking poles when in the Alps. You'll see fully half of the travelers on the trails using them. If your journey is primarily in the mountains, take them with you! If much of your trip is in the cities, you might want to just buy an inexpensive pair there and not waste the luggage space. Consider passing them along to another traveler in need when you're finished using them!
For tour activities/hikes, poles are not needed. Your guide will likely arrange a group trip up to Schilthorn (weather permitting), and a very manageable hike once back down a stop or two.
