Hello Everyone!
Thinking about going to the Harburg castle on a quick trip down the Romanische Strasse. Looks very interesting. Did I read that you can stay there? Has anyone done that? My wife really wants to spend a night in a castle. I was thinking either Harburg, if possible or Hotel Schloss Eggersberg. Any input?

Yes you can stay there. The website of the castle is here (scroll down for English text).
Another option in the area would be Burg Katzenstein.

I found the castle at Harburg (Schwaben) to be very interesting. I don't think it was ever taken.
I've seen information about the hotel on the website, but I don't know if it is a new building or one of the original ones renovated.
And, by the way, if arriving by train, from the train station it is an easy 1 km walk into town. There is no public transportation from the station. So if arriving by train with luggage, keep that in mind. The trail up from town is steep.
