My father (85) is a big armchair supporter of FC St. Pauli. We may be visiting Hamburg this year and, while we know there's not much chance of getting an actual match ticket, he'd love some local flavour. Is anyone aware of a pub or caff in Hamburg where a non-German-speaking old man could watch a match on TV with local fans and not get mocked for being a tourist or given a "prove you're a REAL fan" trivia grilling?

I would write to the club directly if they can handle an entry to an old fan coming from far away. They have a big heart. They can help with a Fan-Kneipe if they cannot fulfill your wish.
Once I worked as a manager for a company which became main and dress sponsor of FC St. Pauli around year 2002, just because our marketing director Robert was such a huge fan. He registered his son as club member 1 day after his birth.
Directly across the street from the stadium is the Jolly Roger. It's basically the semi-official pub for the team. St. Pauli fans are generally quite accepting and open, so it might be a good option, though I haven't been. The Astra Brewery is the local brewery and an official sponsor of St. Pauli, and it sits just at the end of the Reeperbahn. They play all the St. Pauli games, and it's an easy place to sit at any time.
The Pub formerly known as Froggy's (yes, that's the name) might also be a good option, and they show both HSV and St. Pauli. It's a bit less punk rock, more of a generic spot. I have been, but not during a game and when it was still just Froggy's, but the neighborhood is a bit more upscale. Same with the Aalhaus.
Honestly, your best bet is to go to the fan shop on the Reeperbahn and get their recommendation. You could probably stop by the stadium office and ask as well, or go to the Jolly Roger on a non-game day. Same at the Astra. I think you'll be fine in any of those, and I think Astra would be my recommendation.
