Frankfurt-Passau: Look up whether your airline is participating in the Rail&Fly program of the DB. So you would be able to hop on any long distance train any time on arrival in FRA.

Neuschwanstein / Dachau: Buy local tickets on the spot (Bayern Ticket for the Neuschwanstein trip, MVV ticket for Dachau).

München - Nürnberg: You can travel on a fast regional train every other hour, usable with the Bayern ticket (€31/2), the first one leaving at 9:01. Alternatively, pre-book a train specific Sparpreis ticket for the ICE (saves approx 40 min).

Note: there are three regional lines connection Munich and Nürnberg: a. Munich - Augsburg - Nürnberg, b. Munich - Ingolstadt - Treuchtlingen - Nürnberg, c. Munich - Regensburg Nürnberg. I'd avoid those, since trains can take three hours and more. Use the RE train running over the direct ICE line München - Ingolstadt - Nürnberg (bypassing Treuchtlingen), aka "München-Nürnberg Express".

Nürnberg - Frankfurt: pre-book a train specific Sparpreis ticket for the ICE. Do it right now since prices will go up.

What's your point of origin on 5/28?

Where does the cruise end - from where you then take the train to Munich on 5/28?

See info and links on our German rail page. There are no senior discounts on train ticket in this area.

Sorry, but what is "UB"?

Doesn't look like you are spending any time in Frankfurt. Why fly into that airport? Why not fly in and out of MUC (Munich airport)?

Cruise returns to Passau. Flying into Frankfurt because it is non-stop and inexpensive from our home. It would cost too much and take to long with transfers to fly into Munich.

Passau to Munich is an hourly regional train, so that is a Bayern Ticket, 31 EUR for 2, buy out of the station vending machine and travel after 9 am M-F. That will also give you free use of the Munich transit system until 3 am the next day.

May 19, FRA - Passau: It's €186 for two if you buy your train ticket at the station so don't do that. It's currently €120 - €160/2 adults at present for saver fare trips subsequent to your arrival - tickets which might be forfeited if you have a late flight - so you don't want that either.

June 4, Nuremberg - FRA: Some saver fares available at €50 - €60 for two at certain hours but your arrival time isn't clear, so hard to say. Some trips are €100+

With this in mind, you will pay less if you take advantage of the German Rail twin pass for two days priced at €225 from DB. This promotional fare must be purchased by 3/31. You can use the GRP at any time on any two days on any train. When you arrive at FRA, just hop on.

(Of course, if that rail + fly deal works for you, get that for May 19 and a saver fare for June 4 instead.)

Then buy the Bayern Ticket day pass for the other two days - it provides city transport within both cities as well as transport by regional train.

It occurs to me that June 4 may be a very long day with an international flight after your train trip. Maybe you want to travel on the evening of June 3 to FRA??
