This webpage has 10 hotels in Bingen. The website also has some apartments and private rooms in Bingen. I'd say the main thing is you want to be near one of the train stations (Hauptbahnhof or Stadtbahnhof) is you are using trains or the Stadtbahnhof is you are going to go further by boat.
