Freiburg/Colmar versus Munich or Nürnberg

Greetings Forum Readers!
My boyfriend and I are in the midst of planning a two-week trip this December 2016 and would love to hear from you regarding what to expect from specific areas of Germany. Here is what we have slated so far:

Nov 30: Leave California to Iceland!
Dec 1: Arrive Iceland
Dec 2: Iceland
Dec 3: Iceland
Dec 4: Leave Iceland to Amsterdam!
Dec 5: Amsterdam
Dec 6: Leave Amsterdam to.....(this is where you guys come in!)
Dec 7:
Dec 8:
Dec 9: Leave (.........) for Berlin!
Dec 10-14: Berlin, perhaps with a day visiting Dresden, flying home on Dec 14

Ideas we've had for this mini-chunk in the middle:
1) Fly to Basel airport and take train to Freiburg. Stay in Freiburg with day trip to Colmar or Baden-Baden.
2) Similar to option 1, but stay in Colmar with possible day trip to Freiburg.
3) Stay in Munich with day trip to Nurnberg/Rothenburg

I realize this may be a bit apples to oranges since Colmar and Freiburg are small compared to Nurnberg and Munich, but in terms of exploring the towns (and Christmas markets) and having balance and variety in the trip, I'm just not sure which direction to take. My boyfriend and I are 30 and 31. We are not terribly concerned with sight-seeing and major tourist attractions. We are mostly interested in eating good food (especially trying local specialties), exploring towns/cities on foot, checking out cafes and people-watching. Certainly cool bars/late night spots are of interest, but neither of us are into the club/party scene. We usually prefer small museums to larger ones (example Orsay in Paris over the Louvre). We will not have a car. Thank you kindly in advance for any suggestions or input you may have. We are, of course, open to other suggestions as well!

I'd choose option #4. Nuremberg. Nuremberg with a day trip to Bamberg - it's a UNESCO World Heritage medieval city and a great place to try regional cuisine and Franconian beer varieties. It's only 45 minutes from Nuremberg to Bamberg by direct regional express train.

My first reaction is how little time you are staying in Amsterdam. I would add at least another day there. We loved the Alsace region except for Colmar. Consider Strasbourg instead and add a night in a wine village such as Riquwehr.

Modest proposal. Stay another night in Amsterdam, then a train to Cologne and have some Koelsch beer. It can only be brewed within sight of the twin spires of the Cologne Cathedral. Interesting tavern, Papa Joe's Biersalon in the Alt Stadt for an amazing collection of musical automatons. Have a pocketful of 1 EUR coins. Or see if anyone is playing at Papa Joe's Jazz Lokal nearby.

Next evening, take the penultimate CityNightLine train to Berlin. Economy compartment for 175 EUR for the 2 of you or 272 EUR for a Deluxe compartment. I don't recommend the following night because it is the last one and DB is not offering any Sparpreis tickets so prices are double. I guess DB is counting on the nostalgia freaks to flock in. After Friday night, no more night trains in Germany unless operated by foreign railways.

That would also give you an extra night in Berlin. Extra time for day trips besides Dresden. You could even do a quick overnight to Prague.
