My favorite restaurants in Frankfurt for tasty local specialties:
Dauth-Schneider or Atschel in Sachsenhausen. Zur Sonne or Apfelwein Solzer in Bornheim. Zum Bär or Alte Zollwache in Höchst.
If you want to stay right in the center of the city, then try Leib & Seele near the Hauptwache. (right behind Sport Arena)
Ms. Jo and I really seem to have the same taste in local food. Either of those restaurants are great. Where are you staying? We'll point you to the most conveniently located one for you.

I can second the recommendations of Zum Baeren and Solzer.
Zum Baeren and Alte Zollwache are a short walk from Hoechst station, which is a brief ride from any S-Bahn station in central Frankfurt.
Solzer is a short walk from Bornheim Mitte U-Bahn station.
Love Atschel in Sachsenhausen! I showed up on a busy night with three friends and no reservations, and they couldn't have been nicer. The food's wonderful, and the tightly spaced tables make for a fun evening.
