Few Days between Baden Baden and Freiburg

hello all, looking for a winery tour or one that is a must visit for 4 adults (40s) during our time in the Black Forest area. We are stay at the Schloss Eberstein just northeast of Baden Baden for 2 nights then driving south to Freiburg to catch a train to Lucerne.

We are hoping to stop in Strasburg on our way south for a visit..but open to other things to see or experience. I have been to the area long time ago, but my fellow travelers have not.

Or are we better off visiting Strasburg in the AM until lunch the drive through small towns like Offenburg and Gengenbach on our way to Freiburg? I know it seems like a ton, but just mentioning them to see if there are must see places.

Things we are interested in , Good food , great wine, hikes, and sight seeing.

According to a quick WB search, Trimbach is appointment only and Weinbach (recommended) may be also though accounts differ.

Other good options mentioned: Deiss and especially Paul Blanck.

Abbaye de la Pommeraie in Selestat has rooms and an Michelin* restaurant on site. Hotel Kanzel had huge rooms and a driver (!) for tastings.

Colmar is a beautiful city, but it's a city. It's not a quick in & out, IMO.
