Any strong opinions on the Limburg-Koblenz-Achen router versus what seems like more countryside (mountainous?) route of heading west out of Wiesbaden towards Bitburg and then into Belgium, then north to Maastricht?

Are you looking for scenery or efficieny? If the latter, the quickest drive is A3 and A4 via Limburg, Cologne and Achen. I've driven the route via Bitburg once. It was longer and less scenic.
The most scenic option would be to drive along the right bank of the Rhine, but this will add several hours to the trip.

Interesting itinerary...looking for anything historical through Bitburg , Koblenz, or Wiesbaden. Maastricht ..historically tempting.
If there is enough time you can drive further along the Mosel from Koblenz to Trier. Drive through the northern side of Luxembourg, with stops in Echternach, Vianden and Esch-sur-Sûre, to Bastogne in Belgium. From there straight to Maastricht.
Monschau is certainly worth a visit, but less easier to get to.
