Driving from Copenhagen to Geneva

My family of 3 are driving from Copenhagen to Geneva - where we will stay for a week - taking 3 days to go down and 2 coming back. I am looking for a point to stay the first night after a longish drive - my second night will be in Bacharach. Cologne is an option, but not sure I want to deal with traffic and city after a 9 hr drive. Hamburg is too close to home - I want to be able to take time to get to Bacharach, see St Goar, etc. Any suggestions either in/around Cologne or another place east/north of there that would be interesting for a night? I am not interested in checking off sights - though am always up for a spa, cave, curious spot. After Bacharach we will drive down rt. 9 through Bingen, Mannheim, Baden Baden and stay around Freiburg. We will also be driving through this area on the way back north, so don't have to see everything. I'd like to go to the spa once, though my daughter doesn't want to do the the nude thing. There are a couple organic vineyards I'd like to see. Any suggestions on day 1 overnight, or interesting non-touristed things would be appreciated, as well as b&b in freiburg.

Hi! About halfway between the two is Heidelberg, in Germany...very cute little town with a castle and nice hills. Easy to drive into and out of since it's rather small.
Strasbourg is about 1/3 of the way from Geneva going back north...beautiful city!
I would love advice on Copenhagen!! I'm going there for a week in September and was there for two nights over 30 years ago...I remember very little...what would you recommend as far as restaurants, good places for locally brewed beer, food, coffee, pastry, walks, parks. I'll be there with a fairly sizable group of friends and we're looking to have a good time - but we are all between the ages of 40 - 60 so nothing too "fun", if you know what I mean. ;)
