My wife and i have only a couple of days in Cologne and want to make the most of them. We'd love suggestions on places to visit, inexpensive but great places to eat (wife is vegetarian), etc. Love to walk, been on 3 RS tours.

If you have enough time, Dusseldorf is quite close. Cologne is a walking city. But the Medieval and adjacent Ethnographic museum are worth the subway ride.
I am still partial to Papa Joes Biersalon in the Alter Markt. Put a Euro in the box on the column and listen to Tuennes & Schael play from a selection of German folk and pop tunes.

Restaurant is standard German fare, but there may be some vegetarian items on the menu. The Koelsch beer is genuine.
