Not sure what you mean by "German states coins".
Do you mean coins from pre-1870 when the German states were independent countries and issued their own currencies?
Or do you mean the modern commemorative €2 coins? If it is the latter, they are not all commemorating specific states. You get those in your change, so by being observant you can collect a few.

I can picture a coin collector shop in the Altstadt of Nürnberg, but sorry, I can't help you for any of the cities you named.
Hi Lina, in Munich you can try Münzgalerie München.
They have some examples of what you want online (click Altdeutsche Münzen on their site), but bigger selection probably in shop.
Just take Tram 20 or 21 (2 or 3 stops), or the U-bahn (one stop) U1 / U7 to Stiglmaierplatz. Fifteen minute walk from Hbf alternately.
Treemans is just up and across Dachauerstraße for sandwiches / snacks ;)

PS: Coin shop at Hbf (just outside, Hbf Nord) is generally much pricier although maybe worth a look.

We found some coins in Luxembourg and in Lindau but not much of the old German states coins, whilst we didn't have enough time to extensively look for them, though.
