The Lohspeicher has a great location in the old town. Haven't stayed there myself. Restaurant is supposed to be quite good.

ZFW website (pages in German only - sent my nephew here and he loved the place. Hosts speak English; use contact info on this page if interested. A somewhat steep walk up from town in the direction of the castle. Doubles are about €55 for one night w/ brkfst, price goes down with the number of nights you stay.)

Here are a few names. But I'm a wine dunce so please don't hold me accountable for the wine quality.
In addition to tasting wine at Weingut Rademacher you can also stay there and have a room with a terrace right next to the vineyard. I enjoyed the Rademacher wine while staying there, so I think it is a good place to go for a tasting.
We stayed in Cochem this fall at Hotel Villa Vinum Cochem. http://www.villa-vinum-cochem.de/. We were very happy with it.
We stayed at Lohspeicher about 7 years ago and will be staying there again this coming summer. We really enjoyed the hotel and the hospitality, though it is a bit pricier. The breakfasts are wonderful and I'd guess hint at the quality of the dinner meals. We will actually do one of their tasting meals this time to try it out. Last visit we needed to get some laundry done and asked about a laundromat. They told us there were none in town and offered to do our laundry, free of charge, for us! Very nice touch. Looking forward to our return visit.
Stayed there for one night and found it to be a charming little Mosel River town. Don't recall the name of the little hotel where I stayed, but it was in the old section about a city block off the river. It was cozy and the proprietress was welcoming which is always adequate for me. I do remember that the old town seemed to have a "no kids zone". Never really understood why, but found it mildly curious. This town was a good stop along the way and I enjoyed it.
Just returned from a trip to Germany which included a 3-night stay in Cochem. Such a beautiful little town on the Moselle River! I highly recommend where we stayed: Hotel Karl Muller: http://www.hotel-karl-mueller.de. There is a laundry service available and there is a restaurant as well. The breakfasts were fabulous. We were not around at dinner time but the menu looked great!
