We need to to take train from Fussen to Munich on Sunday, July 22 and I'm confused on the wording about the schedule. The 17:33 train says" runs not every day, 21. July until 7. Oct 2018 Sa,Su;"
And similarly, the 16:34 train says" runs not every day, 22.July until 2.Dec 2018 Su"
Does this wording mean neither the 16:34 nor the 17:33 trains will be running on Sunday July 22?

They are on the schedule that day, they will run. The 17:33 is a connection at Buchloe.
There are some days it does not run in August, and it does not show up on the schedule those days.
EX. click on the 16:34 train number it says this:
not every day, 22. Jul until 12. Aug 2018 Su; also 15. Aug
When you go through the schedule, you'll see it runs every day to Su Aug 12, then does not run Mo Aug 13 or Tu Aug 14, but does Wed Aug 15.
If a given itinerary appears for the date you put in, the trains for that itinerary will operate on that date.
Both the trains you ask about are scheduled to operate. You have no problem.
The notation just means that during the stated period, you cannot infer that the same train(s) will run EVERY day.
You can ignore that, it's info for commuters. If bahn.com shows a train for your requested date it will run. So, both trains are available.

Why, though, can you not make a reservation? I've had the same question. We would like to go from Fussen to Munich on July 06. We'd like to take the 0806 train, but DB website says "Reservation Impossible". We also get the message. "Runs not every day, 2. Jul until 16. Aug 2018"
That is because it is a regional train, like a commuter train. Get on board, find a seat and enjoy the ride. Since it originates at Fuessen, get there early when the train is spotted on the platform and you will be the first on-board. If no seats available, stand until one opens up. The train is on the schedule for July 6, so it will definitely run that day.
There are some regional trains that offer seat reservations, but you have to buy them out of DB Automaten, not on-line. They don't appear to available for the Munich-Fuessen trains. Scroll down on this page:

PS; If there are 3 of you, leave at 9:05 and do the transfer at Buchloe and it will cost you 34 EUR with a Bayern Ticket, rather than 85.20 EUR on the 8:06.
Bonus, you will have free use of the Munich transit system until 3 am the next day.
