Which option to use will depend on your budget and when this trip is taking place (the Bus only runs on specific days). One of the easiest methods for a group of five would probably be to travel by train to one of the nearby stations, and then use a Taxi (Van) from there (be sure to arrange a time for the trip back to the station). Will you have your luggage with you at that time? There's also the hike from Moselkern if you're up for that.

The buses from several stations on the Mosel to Burg Eltz run on Saturday and Sunday in the "summer". Check with the Bahn website. Put in "Burg Eltz" and accept the destination with "Wierschem". The closest rail station to Burg Eltz is Hatzenport, use it for the start.
