Why would you use a valuable GRP day when a day pass for Zones AB is only 7 EUR?

Trying to understand your specific question.
Lets say you had a German Rail Pass Flexi 2nd class youth for 5 days of travel in a month for 185 EUR. That comes out to 37 EUR per day. So if you had 5 long distance trips planned, you can buy local transit for other days. If you were arriving in Berlin on a day you were using a pass-day, then you can use the Berlin S-Bahn system for the rest of the day. Other days, buy local day tickets for the areas you want to cover.
If you only had 4 days of travel planned, then you could use a day for travels in Berlin on the S-Bahn. I guess its better than wasting a day. But with a Berlin day pass, you can also use the U-Bahn, trams, buses. With a GRP pass-day, you are limited to the S-Bahn network.

For 5 days use the 7-Day-Ticket, cheaper than 5 single day passes. Buy the AB version. If you want to travel outside Berlin, e.g. Potsdam you just buy 2 single extension tickets for zone C.

The S-Bahn is a train. To use any train, whether for 1 Km or the length of Germany, you need a valid ticket or pass. Your pass is only valid on its active days.
It is of course not very sensible to use a pass day for one short trip only, when a ticket or local pass is a lot cheaper.
