Traveling by train. after a brief visit to Munich, I have 5 free nights before my hotel reservations in Bolzano. Looking for a good 'stopover base' in the Bavarian/Austrian alps. Any suggestions? Been to Garmish-P, Salzburg, Oberammergau and Berschesgaden already.

Ramsau is a great spot for hiking, chilling at night, access to Königsee, day trips to Salzburg. I think it’s the perfect spot as a base. It’s a very different experience than sleeping in either Berchtesgaden or Salzburg.
That said, you’ve been to that area so you may not want to go back.

Innsbruck? Good public transportation to the Stubaital. Detour towards Kitzbühel and the Wilder Kaiser region? Detour south into the Zillertal - Mayrhofen?

Ortisei??? Very close to Bolzano, but enough hiking to keep you busy for a week.
