We are going to stop there on our way to Berlin. What are some things to see/do that you can recommend? We plan to get there mid morning and leave late afternoon.

The town itself is one of the best things to “see.” Be sure to walk over the bridge “through” the town hall, which sits on the bridge in the river. The scenery is beautiful. But also be sure to visit the cathedral. Bamberg has one of the greatest Romanesque cathedrals in Europe. There are art treasures inside, such as the Bamberger Reiter statue. You’ll wish you had more than one day in this gem of a city.
Bamberg is wonderful and the entire Altstadt is a UNESCO World Heritage site. It’s known as an example of how central European towns were often built up around the layouts established in the early Middle Ages.
The Dom (cathedral) is magnificent. And unlike many of the Catholic churches in Germany that turned protestant, this one stayed Catholic. What’s more amazing is that the original cathedral was built in 1012. It burned down and this one went up in the 1200’s, but the diocese has been around for over 1000 years. While you're there, don't miss the Papal Tomb of Pope Clemens II, who died in 1047. He was originally from Bamberg and loved it so much that he wanted to be buried there. It is the only papal burial place north of the Alps.
I would also recommend seeing the tomb of Heinrich II and his wife Kunigunde while you're in the Dom. It was created by the amazing sculptor Tilman Riemenschneider in 1513. The marble slab on top is a likeness of the couple and there are relief sculptures on the side panel. It is very beautiful.
As others have mentioned, don't miss the Altes Rathaus (town hall). It is a beautiful building with amazing frescos painted on it. It stands on an artificial island in the middle of the Regnitz River. Legend has it that the Bishop of Bamberg did not give permission to the townspeople to build a town hall, and so the townspeople drove wooden piles in the river and built an island to house the town hall.
Bamberg really is beautiful and very walkable. You could just meander through the town and soak in the atmosphere. Enjoy!

If you enjoy beer, Bamberg is maybe the top beer town in Germany. Brauerei Spezial is just the tip of the iceberg. There are at least another 8 breweries with multiple locations and some beer gardens right in the central area, more if you go further afield.. The Rauchbier, using smoked malt is the most famous, but a number of styles are available. If you really want to get into beer, there is also a beer museum and one of the largest malting companies in Germany, that has a visitor center, plus brews small batches of beer.

Try to spot the actual three-dimensional cherub leg hidden among the two-dimensional artworks on the Altes Rathaus.
The cafe in the rose garden at the New Residence is maybe a bit overpriced but has a lovely atmosphere on a sunny day.
If you do not want to walk both ways I recommend to take bus 901 from sation "Bamberg Bahnhof/Ludwigstr." to station "Schranne".
