Looking for recommendations on hotels, restaurants first part of December. 3 adults and 3 kids 10, 14, 15. Probably looking for 2 rooms and family friendly sights.
Since that will be Christmas Market season better book soon.

Nuremberg has a museum for any interest. The Germanisches National Museum in particular is wide ranging in scope and detail. Also since the Christmas Markets will be going on consider taking the S-Bahn a few stops north to Fuerth that has its own markets which are very user friendly sized and very much more "German" than the international Nuremberg Market.

Have fun.
We go every other year for the Xmas Markets. You are VERY late to be booking a hotel close to the markets. We booked a yr ago. We love Hotel Victoria, it's quaint, local, easy to walk everywhere, across from the train station, within the OLD TOWN WALL, great free breakfast, safe, clean - we've been staying there for YEARS. See the market of course, don't miss the International market and the children's market. The 3 Cathedrals are amazing. Don't miss the free concerts in front of the Cathedral at the market. The food in the markets is GREAT, but there are so many good places to eat in the area. Don't miss the famous sausage sandwiches, the Belgium fries in the children's market, the potato pancakes. There is a good Italian place next door to the main market.
I can recommend the Adina Hotel. I've stayed twice and will be back next month. It's located on the edge of Old Town and a five minute walk to the main area of the Christmas Markets. What's nice about this hotel for a family is that each room has a kitchen and a small washer/dryer. There is a good size Edeka supermarket a five minute walk away.
Plenty of sights in Nuremberg. If any are interested in WWII, I recommend the courthouse where the Nuremberg trials were held. It's only a short S bahn from the center of Nurember.
There is also a train museum if you think that might interest the kids. There is also the City Tour Tram.
But that time of year, it's the Christmas Markets that hold court. I was there two years ago just as they were about to open. Great food stalls.
