the question is a little broad.

Amenity level, desired extras, quint, modern, airbnb, hotel, hostel, parking, stairs, breakfast or not, price point, rural, urban, chain or independent - all or even some would help to suggest possibilities.

I personally stay just out of town.

Do you need golf access?

Hotel Burgschmiet
Just outside Old Town / Tiergärtnertor Gate - 4 minute walk.

Friendly Staff
Clean and spacious room
Excellent Shower/pressure
Comfortable mattress
Ample breakfast buffet
Three/Four stairs from street level to lobby
Lift

Close to:
Albrecht Dürer's House/Museum-Excellent self-guided tour
Kunstbunker- Excellent guided tour of WWII Art Bunker (Guide speaks in German, English audio guide available) Dress warm, it's damp and chilly (was there mid September)
Red Beer Tour - We had an excellent guide, spoke in English (cannot recall if it was an English speaking tour option that we booked)
If time allows, Nürnberg Trials Museum has an excellent self-guided tour. Spent four hours there (and still more to see, and read!) (About 20 min subway ride?? Easy to get to. Book ahead of time)

Restaurant: Alt Kuche, make a reservation, it's small. Best meal of our 23 day journey through Germany.

Enjoy!

Agree with Hotel Victoria. We've stayed there many times during the Christmas Markets. It includes a nice breakfast. It's within the city wall and walkable to everywhere. It also is across the street from the Train Station (you can walk underground and get there). The staff is so amazing and kind. We've already booked it for Dec. 2023 again. Check it our on TripAdvisor for reviews and photos - but definitely book it on their website.

We stayed at the Hotel Drei Raben during Christmas Markets in 2019 and 2022 and loved it. A little pricey but included breakfast and happy hour were quite good. The front desk is very helpful. Very near the train station and easily walked to all the sites and/or metro stops. We visited the Nuremberg trials courtroom and museum - plan to spend a few hours- and the Art Bunker tour - fascinating! Next door there is a nice burger restaurant if you need that. We also ate at Alte Kuch'n &Im Keller for authentic Bavarian food. we ate in the cellar and it was quite authentic surroundings. We love Nuremberg!! We visited the Nazi sites on the first trip and then visited the Courtroom and Bunker on the second trip. We were traveling by train on both trips. In 2022, we trained over to Rothenberg for a day trip during the Christmas Market. Wonderful!!
