Bamberg, Germany Hotel recommendations, how many days is recommended?

Heading to Germany next fall, plan on flying into Munich then a train up to Bamberg to do some beer tasting. Can anyone recommend a small boutique hotel or B&B in Bamberg? I'm tentatively planning on 3 nights there arrivingthe afternoon on the first day from the US, touring the city a bit on the that day, beer tour on the 2nd day and more sites to see on the 3rd, next we'll head down to Munich for a few days and continue our trip to other parts. I would appreciate any input or thoughts from those who may have been to Bamberg. Is this enough time there? We will not have a car, traveling by train this time.

This isn't a boutique hotel or a B&B, but it was an excellent hotel only a 10 minute walk to the train station and very close to the central part of Bamberg. Excellent breakfast. Best Western Bamberg. I would stay there again and again. I think your amount of time is plenty. Very enjoyable city on the river.

I second the suggestion from Threadwear above. I thought the Best Western was in a great location for walking all over, including Brauerei Fässla and Brauerei Spezial, just around the corner and across the street from each other. You've gotta try the rauchbier.
Brauerei Fässla used to also have rooms to rent. Don't know if they still do.

Edited to add: I just Googled both places and it looks like they both also rent rooms. I'd probably still opt for the Best Western, though.

For a smaller and more local kind of place, try searching for "Pension". They usually have a minimum stay of two nights, so you'll easily fulfill that requirement.
