My husband and I will be taking a river cruise in Provence and end in Lyon the end of May in 2027. We will not obtain a car so will need a guide with a car. We want to see Jewish sites, WWII and Resistance sites in the area. We also like Impressionist art (I know about the Granet Museum and the Caumont Centre d’Art, which I think I would love. Can you recommend a tour guide/company who would guide for 2 people for 2 days only? Also recommend WWII and Resistance sites, as I haven't found any of that; only read about it in novels.

In Lyon there is the Centre d'Histoire de la Resistance et de la Deportation (CHRD). You might Google that. Also, the Lyon tourist bureau may have some recommendations.
There is also the Grear Synagogue in Lyon, built in 1864.
Fyi, Lyon is not in Provence. If you are looking for WWII resistance and Jewish sites in Provence, which cities or towns are you inquiring about? Likewise, Impressionist art...which locations in Provence, or in Lyon?
I cannot help with guides but do know of two important WWII-related sites along your route.
While you're in Aix-en-Provence, I highly recommend visiting Camp des Milles. it's not in the center of the city, but I was able to get a city bus out there in 2019. CdM was a WWII internment camp. I think most of the people interned there ended up being sent on to Drancy outside Paris and then to the east. The camp is now a memorial with very good explanatory displays. I remember finding it totally English-accessible. I don't remember whether I read posted info or listened to an audio guide. You visit the basement level as well as the ground floor. The basement level is chilly even on hot summer days, so I'd take a light jacket of some kind. I'm cold-natured and wouldn't want to wear shorts, but YMMV.
I don't think there's any food within walking distance of the camp, just perhaps a soda machine near the ticket counter.

The Resistance and Deportation History Center in Lyon was not open when I visited that city in 2017, but it will certainly be on my itinerary the next time I get to Lyon.

There are many art museums along the Riviera (at least six in Nice alone), but I'm guessing you don't plan to visit that part of southern France.
The Fondation Vasarely in Aix-en-Provence sounds good. I didn't know about it at the time of my trip; it's possible it opened more recently.

Visit each museum's website to check days and hours of operation. In the past I've seen quite a few smaller museums not open as many days of the week September-May or even September-June as they are in July and August.
You certainly do need to be driven around by the guide in Provence to reach the WW2 and Resistance sites . I know of two of them .
1). In Toulon up on Mont Faron is the " Museum on the Landing and the Liberation of Provence ." This deals with Operation Dragoon when the Anglo-American troops landed in southern France. I saw this museum once in 2001. You can expect that since then the museum has expanded with all the tech improvements and so on. If you are tracking down WW2 museums in France, this is one is one you should see.
I went to Toulon twice in 1999 and 2001, both times in July, both times with the sun, heat, etc a real broiler, both times to track down historical sites, this visit to the Museum was only possible because a local informing me of it.
2). For the Resistance site , go to Vercours. The Tourist Office in Toulon can offer information on this big battle where the Resistance came out to do battle with the German forces with frightful results. I can't recall exactly where I saw it in 2001 in that vicinity but there are memorials to the looses suffered by the Resistance in the Vercours battle
