We are looking for a private full day wine tour leaving from Avignon. Prefer a very personal approach to a couple of good wineries with tours of the property and not just a stop and taste.

The Avignon Tourist Office/Bureau may have a list of providers for wine tours. I would check there and then email the ones that were of interest to me for further questions. Note that, unlike many wineries in the states reservations are frequently needed for tastings and tours, so you are wise to have a tour guide. This also allows you to do more tasting as the enforcement of driving under the influence laws is quite strong. The blood alcohol content is lower than in many states IMO, unless things have recently changed.
That is exactly our experience. ALL of the better wineries required a reservation and generally a fee for a tour and tasting. We did it on our own by advance research for the area we were visiting. One of the wine magazines -- Wine Spectator. ???? -- had a extensive section on wineries to visit.
To add, when researching wineries to visit while en route from the Dordogne Valley to Bordeaux in June 2023, most were open limited days (2-3 per week and often not on Sundays), and had limited hours. All the ones I found required reservations. During harvest season many are not open at all as that is a busy time for them. A guided tour might be easiest for you, but private ones will probably be pricey.
More of a PS but something to consider. Some of the wineries had restaurants associated with them. They would offer a three or four course lunch or five course dinner pared with a different wine for each course. It was expensive but a fantastic experience. I would do at least a couple if you can.
