Can anyone recommend Wine tasting places in Languedoc region of France. Particularly the Minervois area?

For a unique wine tasting experience, there is a restored wine-producing Cistercian monastery called Abbaye de Fontfroide, it also has a nice restaurant and regular concerts of classical music and Gregorian chants, very popular with locals. They specialise in AOC Corbières wine, but is located just south of the Minervois wine region.
I'm familiar with St. Eulalie, and there wine is very good. Another good producer to visit is Coup Roses in La Caunette, right near Minerve.
Not far (about 35 minutes) from Minerve is the St. Chinian wine area. There are loads of terrific wineries there. A favorite of mine is Domaine des Jouglas.
