October is a wonderful time of year to visit Paris! (I'll be there myself this October :-)
Check Air B&B Experiences for some unique things to do. "One-of-a-kind activities hosted by locals" . My friend and I were going to take a sketch class one morning but we couldn't work out the dates. There are many different types of "experiences" offered, including many food-related.

Ive done two Paris Walks tasting tours, Taste of Paris which was very good, and the Chocolate Tour which was more than excellent. Sadly, they are very infrequent, but if one or both coincide with your visit, consider them seriously. You have to register in advance. The schedule for October should be published soon.

I have done tastings with O Chateau and their champagne cruise. The champagne cruise is very fun but not really an educational tasting. I went in May 2018 with 4 of my female relatives and we had a great time and we learned some stuff about the wine but it is less educational than other tastings they do. The grand cru tasting is excellent but pricey. They also do flights of wines in their restaurant and the bartender will discuss the wines with you. My husband prefers that to structured tastings and we have been there several times for that. There is also an excellent champagne tasting in the basement of the champagne shop, Dilettante, in the 6th. My sister and I did that last summer. For cheese tasting check out L’affineur Affine in the 9th (not a structured tasting but sort of one if you order the 5-cheese plate) and Paroles des Fromagers (structured tasting in the cave) in the 10th.

A wine tasting at O'Chateau is a wonderful experience! The instructor was knowledgeable, professional, and very friendly. The snacks were tasty and the wine was extraordinary.
In 3 weeks I'm taking the morning French Market class offered by Cook'n with Class. Might be something you're interested in as well. I don't know how it's going to turn out, but it has great reviews. Wish me luck!
O'Chateau and take the class early in your trip to have a better appreciation of French wine and food pairings for the remainder of the trip.
We are doing a food tour in Montmartre from Secret Food Tours. Paris by Mouth Tours are also highly recommended (it just didn't work with our itinerary). Our tour will have a mix of all of the foods you mentioned in that area with tastings ! I think I am more excited about that than anything else!
I've heard good things about the Galeries Lafayette wine tasting referenced above. Mates of mine (French) went there for a team building event, and enjoyed it.
We did the above mentioned Secret Food Tour of Montmartre this May and had a great experience. We stopped a Fromagerie for several cheeses, a charcuterie for meats, a bakery for one of our 3 desserts, and a few more places. We sampled things as we went, but meanwhile, Maria, our guide, was purchasing things for our meal. We went to an intimate wine bar where plenty of bread and wine were awaiting us. Maria made sure to introduce us to foods we weren’t familiar with, but were specialties of various regions. After we were full of delicious foods, we had 1st dessert—eclairs. Then we left there and moved on to 2nd dessert—a shop with hand-made chocolates where we all got to pick 3 chocolates. Then, 3rd dessert—a tiny shop for crepes. The groups are 10 people. We did the 11 am tour, so that covered lunch for us. It was our first morning in France, so gave us a good introduction to a variety of foods for the rest of our trip.
Another recommendation for checking out the Secret Food Tours website. They offer a variety of tours; we took the one for the Marais and it was outstanding. Lots of food, drink and history in one of my favorite areas of Paris. The guide was born and raised in the district and it seemed she knew everyone along the way! We really enjoyed this tour.
I took a food tour while I was in Paris and it was great! It included a few different places, classic French dishes, lots of wine, cheese, and everyone on it was so friendly.
