So far I have only found Sundays at a church service, but we will be in Paris during the week.
Are there ANY during the week?

If you Google “Paris organ concerts June”. Quite a few leads show up.
Saint Eustache in les Halles and St. Sulpice both have regular organ concerts on magnificent instruments. No idea if there is a schedule up for June, but when you get close to your dates, I would look and see what they have on offer. I think they tend to be on Friday nights -- but again check their websites closer to your time of travel.
Go to l'Officiel des spectacles.
Choose concerts and you'll have hundreds to sort through by date. You may find a weekday organ concert

If you want to hear an organ recital in Paris visit Saint-Sulpice: https://www.paroissesaintsulpice.paris/.
St. Sulpice has a free organ concert every Sunday around noon.
Thank you all for the great advice--that is what so nice about the forum, folks share relevant experience, which goes far above lines from a google search (which most folks, like myself have already searched and have found unsatisfactory results BEFORE coming here)
San Sulpice traditionally employs the best organist in France. He/she plays a 20 minute concert at the end of mass every Sunday morning. We always go there for this. Sends chills up your spine!!
