I have been in Paris a couple times during Easter and remember it as crazy busy (as in “much busier than usual”). In 2023 the week preceding Easter the metros were literally CRAMMED full. Does anyone have insight as to when it starts ramping up and for how long-I.e., a week before and/or the week after?

Paris is always busy, other than in August which is typically low season. However, with the Olympics/Paralympics, this August has been crazy.
Holy week leading Easter Sunday plus the following Monday sees a lot of domestic European travel because of the associated holidays in many countries. Not sure I would specifically avoid that week in Paris though.
In 2022 I arrived in Paris on Easter for a one week stay. I don’t recall it as being any busier than my other visits.
We were in Paris mid April of this year, and it was two weeks after Easter 3/31. Everything was very busy and crowded. Next year Easter is much later 4/20, at the height of spring and blooms and I would assume it would also be crowded. It's Paris. It's busy. And when you say Easter break, do you mean for the locals? The public school across from our hotel in Paris was on break the week we were there two weeks after Easter. Spring break in general in the US varies from early March to end of April. I'd just assume if you go in the spring, it will be busy.
