My wife and I will spend a night at a CDG airport upon our arrival from US. We will leave by car the following morning. Any thoughts on things to do or see, as well as dining near Charles de Gaulle airport?

What time do you arrive?
Knowing how much time you are trying to fill will help folks provide useful suggestions.
If you arrive in the morning, then I'd visit Senlis -- a medieval town not far from CDG. There is not much near the airport. You'd probably need a cab both ways. Chateau Chantilly is also a cab ride away. Or Paris by RER B.
If in the afternoon, your best bet is to go into Paris on the RER for dinner. In fact it would be the one interesting place you can easily go on public transport. 13 Euros each way.

You could also check out the French Air and Space Museum in Le Bourget, close to CDG. It's pretty amazing, and it has a pleasant onsite cafe.
So you have a full day?
Senlis is a good option. Or St Denis with the Basilica, easily combined with the Aerospace museum at Le Bourget.
