We arrive in Paris at about 7:00 pm and our connecting flight is not until 8:00 am the next morning. Is there a hotel nearby where we could stay and rest for a few hours or would the time it takes to go to a hotel make it not a viable solution? Should we just stay in the airport over night?
Any suggestions on this would be very helpful.

There are several hotel right by the airport. There is a Sheraton right in Terminal 2. What terminal are you changing at?
No don't sleep in the airport that would be pure misery.
What you can do if you are on a budget is stay at one these hotels located either at one of the terminals or nearby and accessible by shuttle

there is no 'terminal 2' - they're all subdivided and frankly, they should all have their own ##. 2E is the Air France terminal but even that is subdivided into K, L, M!
I would book a hotel like the Novotel at Roisypole, drop my bags and then hop on the RER B into Paris and get dinner and take a walk and then return to the airport for the night. This hotel area is right on the CDG VAL airport continuous shuttle transport and the cheaper hotels are there.
