We are considering a trip to Paris the last week of October through the 1st week of November. What kinds of weather can we expect as to temperatures and rain?
We were in Paris late October thus year. The weather was beautiful. We needed sweaters and light jackets, especially in the evening. But most days were clear and crisp.
Late October is usually when the weather patterns in NW Europe shift from warm and dry to cooler and damp. Nothing particulalrly cold, more like sweater and jacket weather. Rain is usually light but prolonged. Nothing like those stormy bursts you get in Texas.
I was in Paris this Fall, the first week of November.
It rained a couple of days and was near freezing (35*F) one day, but other days were cold with some sun.
But what the heck ... it's Paris!
I'd say go for it, check the weather forecast before you leave, and pack for changes in temps with layers.

In our experience Novembers have been overcast, drizzly and chilly and unpleasant. But weather is not highly predictable in Paris. We continue to book Octobers but avoid November.

Not only is it a school holiday, but it is also a week -long break encompassing the Nov 11 the holiday as well.
Does a school and/or work holiday run from Nov 1 (All Saints' Day) to Nov 11 (Armistice Day)? Are students and/or workers off school & work any of these day?

Yes, but all the schoolchildren will likely be going somewhere other than Paris.
I wouldn't expect a dramatic change in the weather. Just keep an eye on live weather websites a day or two before you leave for Paris. Have an alternative wardrobe ready in case you need it.

This was exactly the time of my very first visit to Paris in 1987. The weather was quite mild when I arrived from London, and then on the 3rd day I remember coming out of the Musee d'Orsay to be buffeted by a bracing wind. So yes, it's a time of changeable weather.
I agree with Chexbres on checking the weather just before departure. This past May/June the weather for Paris was supposed to be lower to mid-70s, sunny to partly cloudy. Less than a week out a storm came in the area and we had rain, temp was low 60s and the Seine was flooding. So we added clothing to protect/cover us from the rain & colder weather.
