Another vote for Joucas. Very small and quiet, population about 325. Totally cute town. Not totally off the grid but definitely off the beaten path.
Assuming you'll have a car it's well located for quick visit to Gordes or Roussillon.
My vote would go to Saignon. Not exactly comepletely off the grid, but quite special and with only a fraction of the tourist hordes as nearby Gordes and Roussilion. If haven't been to Joucas, so i cant say which is better.

Stay at Mas Perreal outside of the village. It's run by a Franco-American couple who really know how to take care of their guests (and it's a great breakfast).
