Hello,
If I go to the gardens only at Versailles one day and then go back the next day to view the interior, will I have to pay twice?
Also, how is the parking at the Palace if you get there early?

According to the website gardens are free (except during Musical Fountain and Musical Garden Shows). http://en.chateauversailles.fr/discover/estate/palace
I can't answer your question about parking as we took a train from Paris.
You can visit the gardens on fountain days by just buying a garden ticket which is good all day. The fountains only run for a short time in the morning and then late afternoon and you can leave and visit other parts of the Estate like the Hameau and the Trianon or have lunch by the canal or whatever between the fountain times:

The chateau ticket doesn't give access to the gardens on fountain days (unless you buy a passport that does add that charge) and it is free on non fountain days.
