Can anybody recommend any great vegetarian restaurants in Provence? We will be staying in Bonnieux and in Cassis. Thanks in advance!

Fully vegetarian restaurants are uncommon in that part of the world.
Restaurants with vegetarian options are easier to find. There's a great one in Tourtour that I've been to (la Table de Tourtour) but that's by the Verdon area so you are unlikely to find yourself there.
The "Happy Cow" website is a great resource to find vegetarian and vegetarian-friendly options.

Balso has given you the primary resource, Happy Cow. I have traveled as a vegetarian/pescatarian for many years, and what I always do is read cookbooks to familiarize myself with typical dishes of a region so I know exactly what to look for, what to order, what to avoid. This strategy has served me very well!
