Hi, am travelling to France and Italy this September. Is it possible to obtain my VAT refunds at the CDG airport when leaving France, even though I am flying to another EU country?

No, you file when you are exiting the EU.
They will scan your boarding pass when you try to obtain your VAT refund at CDG and will tell you that you cannot do it because you will be flying to another EU country. Your boarding pass is the proof that you are leaving the EU region and are eligible to get the VAT refund.
You are supposed to do the refund process when exiting the EU but I see no harm in trying to do it at CDG for goods purchased in France. If you have received the appropriate forms from French vendors, you can use the PABLO machines in the Detaxe area. If you get a green light your refund is approved. If you get the red, then you will have to show a boarding pass and possibly the items (in unused condition) to a customs officer. I have done VAT refund processing many times at CDG at the PABLO kiosk and never had to scan my boarding pass at the machines. I've gotten the red light at the machine a couple of times and then I had to show my boarding pass to a customs officer.
your other question is about VAT leaving Italy. You are supposed to claim for all which fit the criteria at your last point leaving the European Union (Switzerland is part of Schengen but not part of the EU so if leaving from Zurich it would be as you leave the EU to enter Switzerland.
