Two weeks near Nice with car

We'd like to explore the area near Nice by staying in one place (probably air B&B) and doing day trips to interesting towns. We may have visitors during that time, so we'd be looking for 2 bedrooms and 2 baths, with parking. After the summer of 2022, we prefer air conditioning. A pool would be great. We do not need to be near a beach. We will travel in late may or mid-September.
We prefer small towns to cities, and not too much uphill walking. Not overcrowded with tourists. Good restaurants,cafes, and shops nearby or near parking lots.

I forgot to mention: we are not "posh" or spendy. We're not cheap, but rather, down to earth. We're willing and able to splurge for something special, but not to be ostentatious.

I met someone who had spent 6 months every year in Beaulieu sur mer, and he loved it. Any other suggestions?

Beaulieu is very nice. Also Antibes, St-Jean Cap Ferrat. But everywhere near the sea will have tourists.

We don't need to be right near the sea. I'm actually looking for a place with a pool. Inland is fine.

Beaulieu-sur-Mer is a nice choice. It is generally quieter and gives you the option of taking the train instead of always driving (actually easier in some towns). Vence is another choice, not as small as some but with a small, compact center. It is off the coast but not far from the A8. Nearby in St. Paul de Vence and the hills between are also a possibility. Biot is another small village that has good access to the A8. Antibes is a nice choice but the access to/from (like Nice) can get a big more bogged down.
