Two days solo in Burgundy region - this weekend - recommendations please

Traveling to Burgundy region from Paris tomorrow. Last minute trip due to some days freeing up while I am in Paris. Planning to visit the region Friday through Sunday. Taking the train in from Paris, likely to Dijon. I will spend one night in Dijon. I Starwood points, so I was able to get a room at Vertigo in Dijon. Considering moving to Beaune on the second night. Thoughts? I am able to get a room at La Terre D'Or, but only know it from Trip Advisor? Should I stay somewhere else? Open to other hotels or other towns. I don't mind spending money to stay in a great property.

My main interests are food and wine. I was thinking of renting a car for at least one day to explore the countryside and other towns. I plan on visiting the hospice de Beaune and potentially the Saturday market in Beaune.

I live in SF now and an a wine lover. From what I understand, visiting this region is nothing like visiting Napa and Sonoma - which is fine with me. I am more interested in quality and learning than "show." I generally dislike the tourist version of anything, but I am a tourist here, so....I would love your recommendations. I know Napa and Sonoma wines quite well, but know nothing about wines in this region, other than I love white burgundies when I tried them, but don't know the first thing about what the best ones are.

Finally, restaurant recommendations. Through internet research, I have a long list. I am flexible and don't have my heart set on anything. I've been lucky to enjoy meals at The French Laundry and other Michelin starred restaurants. However, 8+ course meals as a single woman surrounded by couples on romantic vacations, is not always the best experience. I'm open to that sort of experience, but also fine if it is not Michelin starred.

Bonjour Sara and welcome on board and to my hometown! :) Vertigo hotel is a new fancy hotel near Darcy square, not far from the station and close to the historic center, you'll be perfectly fine ! If you like wine and food, the International Gastronomic Fair has just started and it is a good place to try French Products (wine and food specialties from all over France).

If you like historical buildings the best way to discover Dijon is to get the Owl's Trail brochure at the TO and follow the steps. Don't miss the market on Saturday morning (7am to 1pm). So many things to see in such a short time! There are a few Michelin starred restaurants in Dijon (Frachot, Derbord, Loiseau des ducs) and others less formal that I and my guests particularly liked, DZ'envies, Dr Wine (close to the market) l'Un des Sens.

As for Beaune I'm sure you'll get great advice from other members. Don't miss the wine coast between Dijon and Beaune with all the world famous wines and pretty villages.

If you have the time to visit Lyon, I'd recommend you do so.
Go to Paul Bocuse for lunch - you can just order a main dish, a glass or two of wine and dessert, if you want to.
Or, go to any bouchons in the neighborhood.
